The dish I miss most while away from Singapore has to be Kueh Chap. A bowl of smooth, flat noodles in thin but savory herbal soup and served together with firm tofu, tau pok, lean and fatty pork, intestines, stomach, ears, skin and hard boiled eggs. Yummy!
I simply can’t find this dish here in the States. The best I can find in Massachusetts is the 糯米灌肠 (loosely translated as stuffed intestine with glutinous rice) and its taste is not even close to that of Kueh Chap. 
Most of the time if I miss something from home, I’ll try to learn to cook it myself. I can certainly find the recipe and ingredients to make this dish… but whenever I see the frozen innards in the Asian grocery stores, I’m worried about the edibility of the products. They looked just too white to me like they have gone through some bleaching before. I guess I read too much horrible news on how the mainland Chinese illegally modified the food products for profitability. -_-

Wah lau eh! You try to crave me to death. First, it was DR’s hokkien mee, now it’s kueh chap. How come everything I like one?
I tried making my own in LA and Vancouver, quite successful. But here, I can hardly find the “spare parts”, let alone the “kueh”.
I love kueh chap too but sometimes if think too much can be quite gross right? :p
I love this too! Can’t get it here in Penang, well, not quite the same as the one in Sg. Now I find out which is the best in Sg and when I go back, satisfy my craving!

yummy! I love kueh chap too but I have got no idea where is the best place to have them! I cant get enough of the tau pok and intestines. absolute heaven!
